Asian Inspired Egg Fried Rice with Prawns



Cost - Approx. £5.55 or £8.00 with stir fry pack



Great to have as a meal on its own or can be used as a side to a store-bought stir fry pack (the ones with meat/veg/sauce). Supermarkets do great packs for around £2.





INGREDIENTS




2 Packets of microwave long grain rice (makes this a lot quicker) £1.50


1.5 tbsp oil such as rapeseed or olive


1 large onion, finely diced £0.15


2 cloves of garlic, diced finely or minced £0.10


1 thumb sized piece of ginger peeled and grated £0.10


150g frozen peas (no need to defrost as they will cook in the pan) £0.50


150g prawns - Pre-cooked is quicker but can also be raw, adjust the cooking time to ensure the prawns are piping hot £2.50


3 medium eggs beaten £0.40


1 tbsp sesame seeds optional


1 tbsp soy sauce


½ tbsp rice or white wine vinegar


4 spring onions sliced finely £0.30





1. Heat the oil in a large non-stick frying pan or wok over a medium heat. Fry the onion for 10 minutes or until golden brown.




2. Add the garlic and ginger and fry for a further minute.




3. Tip in the frozen peas and fry for 5 minutes, then add the prawns and fry for a further 2 minutes.




4. Stir the rice into the pan then push everything to one side. Pour the beaten eggs into the empty side of the pan and stir to scramble them.




5. Fold everything together with the sesame seeds (if using), soy and vinegar. Then finish with the spring onions scattered over.



If seasoning try just adding pepper as the soy will already contain salt.





All these meals are designed to feed up to four people for £10 or under. Assuming you have these basic staples in the store cupboard: Oil, butter, flour, salt and pepper, dried herbs and spices, soy sauce, tomato purée etc.



Most of the recipes can be made vegetarian/pescatarian by simply leaving out the meat source or swapping it with a substitute.
