These spicy potato cakes are really easy to make and are delicious hot or cold. You can use the herbs and spices you already have in the cupboard to cut the cost. They're great served with fish fingers and anything else you want to add.
Cooking time? 10 minutes (you read that right!)
Serves Four
Ingredients priced from Asda
850g potatoes, diced £0.68
Savers fish fingers (10 per pack!) £0.60
1tbsp olive oil
1 red chilli, finely chopped
1tsp smoked paprika
100g Cheddar cheese, grated £1
2tbsp flour
20g coriander, chopped £0.79
Oil for shallow frying
Total £3.07
Why not serve with guacamole, tomato salsa and a leaf salad? Or if your appetite is calling for something heavier add a garlic bread or oven chips for only £2 extra
Cooking Method
Place the potatoes in a large saucepan and cover with cold water. Bring to the boil and simmer for 10 mins until tender. Drain.
Add the oil to the pan and fry the chilli and paprika for 1 min. Add the remaining ingredients and coarsely mash, season to taste.
Divide into 8 and pat into flat, round cakes.
Heat a little oil in a non-stick frying pan and fry potato cakes in 2 batches for 1-2 mins on each side until golden.
