Corned Beef Hash

Using mostly ingredients in your cupboard, this corned beef hash is a tasty midweek meal everyone will love. Simply add with a side like potatoes or garlic bread and this becomes a filling meal that can be enjoyed the next day too.

Ingredients priced from Lidl
340g can corned beef, cut into bite size pieces £1.19
567g can new potatoes, drained and thickly sliced £0.22
198g can sweetcorn, drained £0.32
1 onion, thinly sliced £0.19
2tsp English mustard powder
1tbsp Worcester sauce
2tbsp vegetable oil
4 eggs £0.85
1tbsp parsley, finely chopped
Crusty bread (Asda’s tiger bread is the way to go!) £1

Vary this dish by adding your favourite vegetables. Look in your cupboards and see what you got. Have fun with it and make it your own.
Cooking Method
Place corned beef in a bowl, add mustard powder and Worcester sauce and mix well.
In a large frying pan, heat oil, add onion and fry until soft.
Add potatoes and continue frying until they begin to turn brown.
Add corned beef and sweetcorn, continue frying until all the ingredients are heated through.
Stir through the parsley, place on a warm serving dish and keep warm. Fry the eggs and serve immediately on top of the corned beef.
Serve with crusty tiger bread
