Quick, healthy, and easy to make, this lentil and spinach balti recipe is perfect dinner for the whole family. A tasty way to add vegetables to your diet and loaded with protein to keep you full for the day.

Ingredients priced from Asda
410g can green lentils, drained £0.55
370g can leaf spinach, drained £0.70
420g can chopped tomatoes £1.20
1 red onion, finely diced £0.50
2 cloves garlic, crushed £0.69
2tbsp balti curry paste £1.40
150ml vegetable stock £1
20g fresh coriander, roughly chopped £0.50
1tbsp oil
Naan bread £0.80
Chutney £1.25
Total £8.59

If Balti curry paste isn’t to your taste replace with your favourite curry powder and make it your own.
Cooking method
Heat oil in a wok, or deep sided frying pan. Either will be fine. Fry onion until soft, add the garlic and fry for 1 min.
Stir in curry paste and gently fry for 1 min.
Stir in tomatoes, stock and lentils, bring to boil and reduce to a medium heat for 10 mins. Do not allow to boil.
Stir in spinach and gently heat through.
Remove from heat, stir in coriander.
Serve with warm naan bread and chutney
