Chickpea, Sweet Potato & Spinach Curry

This is a healthier alternative to getting a curry on a weekend, easy to make and will win over any Indian takeaway enthusiast. Or don’t tell them and let them believe it was just delivered, secretly knowing you are the master of fake-aways!
It’s a very mild and aromatic curry, perfect as a veggie dish but who are we to judge if you throw in some diced chicken. Spice it up with more chillies if you want and just serve it with some rice cooked to the instructions on the packet. You can also buy naan breads from most supermarkets for as little as 45p.

Ingredients
1 tbsp oil
2 onions, peeled and diced as fine or as chunky as you want £0.30
1 clove garlic, minced £0.10
1 large or 2 small sweet potato(es) diced into small cubes £0.90
2 tbsp curry powder
1 tin of chickpeas, drained £0.40
1 tin of coconut milk £0.65
300ml vegetable stock
1 bag of spinach leaves £0.90
1. Heat the oil in a large deep frying pan and fry the onions and garlic for a few minutes until translucent and tender.
2. Add the cubes of sweet potato and cook further until they start to soften and turn golden on the edges.
3. Add the curry powder and fry for a further 2 minutes, you'll smell the curry spices wafting from the pan.
4. Then add the chick peas and fry for a further 2 minutes.
5. Pour over the coconut milk and stock and bring to the boil, turn down to a simmer for 10-15 minutes. You will see the liquid reduce by a quarter and check the consistency is to your liking.
6. Just before serving, stir through the bag of spinach, which will wilt instantly.
All these meals are designed to feed up to four people for £10 or under. Assuming you have these basic staples in the store cupboard: Oil, butter, flour, salt and pepper, dried herbs and spices, soy sauce, tomato purée etc.
Most of the recipes can be made vegetarian/pescatarian by simply leaving out the meat source or swapping it with a substitute.
