Lemon Chicken and Potatoes

If you use cheaper cuts of meat like boneless chicken thighs instead of chicken breast, you can make dishes like this Grilled lemon chicken with potatoes even on a budget and easy to make. Add a sprinkling of curry powder, cumin and coriander for an extra kick (if that’s what you like!)

430g baby new potatoes, halved £0.69

4 chicken breasts, halved £3.79

55ml (2fl oz) olive oil

1tsp dried oregano

1 lemon, zest and juice

250g pack green beans £0.85

75g (3oz) green olives, pitted (optional but tasty) £0.59


Total £ 5.92


If you’re not to keen on olives try cherry tomatoes instead. They go lovely with the green beans!


Reduce the cost by replacing chicken breasts for thighs. Why not add your favourite sides to this filling and nutritious meal? Adding beans and a garlic bread only adds a further £1.50. Or if you’re looking for a healthier option add your favourite vegetables or a side salad for an extra £1. Have fun with it and make it your own!





Cooking Method



Preheat oven grill to 220°C/425°F/Gas Mark 7. Preheat for ten minutes


Boil the potatoes in a deep pan for 2 mins until starting to become tender.


Put the chicken in a shallow dish with the potatoes. Cover with the olive oil, oregano, zest and juice. Season and grill for 10 mins.


Run green beans under hot water cleaning thoroughly then rinse under cold water, drain before adding them and the olives to the dish and grill for a further 5 mins.


Remove from oven and serve with your favourite sides!
